Roasted Cauliflower with Tahini-Pomegranate Sauce

Servings: 2–3 | Time: 45 min

 

Ingredients

  • 1 whole cauliflower head

  • 2 tbsp extra virgin olive oil

  • 1 tsp turmeric

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • Salt & pepper

Glow Sauce:

  • 4 tbsp tahini

  • Juice of ½ lemon

  • 1 clove garlic

  • ½ cup unsweetened plant yogurt

  • 2 tbsp pomegranate juice (optional)

  • Pinch of chili flakes

Toppings:

  • ¼ cup pomegranate seeds

  • 2 tbsp mixed seeds (pumpkin, sunflower, sesame)

  • Fresh parsley or cilantro

Instructions

  1. Preheat oven to 200°C.

  2. Rub cauliflower with olive oil, spices, salt, and pepper.

  3. Roast for 35–45 min until golden and tender.

  4. Whisk glow sauce ingredients until creamy.

  5. Spread sauce on plate, place cauliflower on top, sprinkle with seeds, herbs, and pomegranate.
