Ingredients

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 red bell pepper, diced

  • 400 g crushed tomatoes

  • 1 tsp paprika

  • ½ tsp cumin

  • ½ tsp turmeric

  • Salt & pepper

  • 3–4 organic eggs

  • 1 tbsp parsley or cilantro

  • Optional: drizzle flaxseed oil after cooking

Instructions

  1. Sauté onion in olive oil for 3 min. Add garlic and pepper; cook 5 min.

  2. Add tomatoes and spices; simmer 10 min.

  3. Make wells, crack eggs in, cover, and cook 5–7 min.

  4. Garnish with herbs and flaxseed oil.
